Albacore swim in big schools and travel fast. Many spawn in the South Pacific and travel all the way to the coast of North America in their adolescence, then retire at about five years old in the seas east of Japan. Most people meet their first albacore in a can as the expensive solid white tuna meat that you have to pry out with a fork.

They are caught on hook and line using various methods, but the most thrilling is the live bait fishery, when fishing crews dip lures into the water ahead of a school whipped into a frenzy by tantalizing bait fish thrown into the water from the stern of the boat. When the albacore strike, the fishermen whip the fish over their heads onto the deck, shaking them loose and dipping in for another.
